Vegetable Pastry Delight

This was the most accidental delight I stumbled upon. I want more "accidents" like these. SERVES 8.


INGREDIENTS

- GF pastry, I get mine from Coles in the freezer isle

- 1 large sweet potato

- 1 purple onion

- Garlic, minced

- Nutalex or butter, melted

- Parsley, fresh

- Dried mixed herbs

- 1tbs olive oil


METHOD

  1. Pre heat the oven to 180 degrees, fan forced

  2. Line a flat baking tray

  3. Defrost the Pastry and lay on the baking tray whilst you prep the filling

  4. Using a mandolin, slice the sweet potato and onion

  5. Place the vegetables in a mixing bowl and add the vegetables and olive oil, pepper and salt, herbs and mix well

  6. Place the vegetables on top of the pastry that is laid like over lapping diamonds

  7. Fold the pastry over the vegetables

  8. Melt the butter or nutalex and then add garlic and brush over the pastry

  9. Cook for at least 15-20mins however keep an eye on the pastry

  10. Enjoy with loved ones as a started before your main or have as leftovers for breakfast the next day.
