Do not be fooled, this is very delicious and easy to make. SERVES 2
INGREDIENTS
300g Tofu (extra firm)
Beetroot hummus
1/4 avocado
1tbs pesto
Handful of pan fried pepitas
Balsamic glaze
METHOD
Cut the tofu in half as if you were cutting slices of bread
In a waffle maker or a lightly oiled fry pan toast the tofu until it has some colour and looks cooked
Spread with beetroot hummus
slice the avocado and place over the hummus
Fry off the pepitas and sprinkle over the avocado
Last of all, drizzle with the balsamic glaze
