A one dish wonder that the whole family will enjoy. So much flavour and great for to show off to friends. Serves 6.
INGREDIENTS
- 1.2kg salmon, skinless and boned
- 3-4tbs olive oil
- 1 bunch of mint
- 2 bunches of coriander
- 1/2 brown onion
- 25g walnuts, chopped
- 1tbs sumac
- 1/2tsp cayenne pepper
- 100g lemon juice
- 90g hulled tahini
METHOD
Pre heat the oven at 150 degrees
Toast the walnuts in a frying pan for 10mins, keep an eye on them
Rub the salmon with sea salt and 1tsp olive oil and wrap in baking paper to completely enclose
Place the salmon parcel on a baking tray and bake for 30-35mins
In the meantime, pick the mint leaves from their stalks, then finely chop coriander, mint leaves and finely dice the onion and combine all in a mixing bowl
coarsely chop the walnuts and add to the bowl
Add sumac, cayenne pepper, remaining olive oil and half of the lemon juice to the nuts and herbs
In a seperate bowl mix the tahini and the remaining lemon juice with 1 teaspoon of salt and half tablespoon of of water. Stir until creamy.
Bring the salmon out of the oven and place on a serving plate.
To create the crust, spread the tahini mixture evenly over the fish, then add the herb mix on top of that. Press down gently, so the herb/nut mixture sticks to the tahini mixture
Serve and enjoy!
