The Nourish & Flourish Platter

This is a show stopper without all the effort. Delicious and full of nutrients. SERVES 2-4.


INGREDIENTS

- 350g squid

- 1 cup gluten free flour

- Salt and pepper

- Peanut oil for frying, all natural option

- Fresh figs

- Tomatoes

- Half fresh lemon

- Fresh basil

- Strawberries

- 1/2 Avocado

- Balsamic glaze


METHOD

  1. Place the flour and pepper and salt in a large mixing bowl, cut the squid into rings and place them in the flour mix and generously mix them through

  2. Place around 3 cups of peanut oil in a deep fry pan and allow it to heat up first

  3. Cook the squid for about 2-3 mins, turning as you go

  4. Cut the fresh ingredients and place on the platter adding the balsamic glaze last and only on the tomatoes

  5. Enjoy with fresh lemon squeezed all over
