A twist on an old classic, The Lamb Sandwich. SERVES AS MANY AS YOU WANT TO MAKE.
INGREDIENTS
- Leftover slow cooked lamb
- 2 slices of a decent gluten free loaf or sourdough
- Pesto, homemade or store bought
- Fresh spinach
- Roasted potato, sliced
- Parmesan, shaved
METHOD
Roast the potatoes. Slice them and coat them in a little olive oil and dried, mixed herbs. Place them in the oven at 180 degrees, fan forced for 30-40mins.
Toast the bread, layer the sandwich with the other ingredients
Add the potatoes on top when they are cooked
Shave on the parmesan when you are ready to eat.
