SWEET POTATO PIE

So simple and a great, easy recipe to prep and have on hand. Now that I have your attention here is how you make it.


INGREDIENTS

1-2 sweet potatoes, peeled and boiled

5+ egg, depending how big your dish is

1/4 - 1/2 cup of zymil cream, you can use normal cream

1tsp dried mixed herbs

Pepper + salt

2-3 large mushrooms, sliced

1/2 brown onion, sliced

Olive oil

1/2 tsp garlic, miced

Bacon, already cooked


METHOD

  1. Preheat the oven to 160 degrees, fan forced

  2. Fry off the bacon, then the onion and mushrooms in a little olive oil and garlic and set aside

  3. Add the chopped sweet potato to boiling water and cook until soft

  4. Mash the sweet potato with a little butter

  5. Line an oven proof dish of your choose with the mashed sweet potato and be sure to get the sweet potato up the sides of the dish, bake this for at least 40mins by itself

  6. Make the filling by whisking your eggs and cream together

  7. Once the sweet potato crust has cooked, pull it out and add the bacon, mushrooms and onion then pour in the egg mix

  8. Place back in the oven for 15-20mins. Maybe longer maybe less depending on how hot your oven gets and how big your pie is

  9. Enjoy! I love having this for Breakfast with some balsamic glaze over the top of it.
