STUFFED CAPSICUMS

A great mid-week dinner for the family and a sneaking and fun way to get vegetables into the kids. SERVES 4


INGREDIENTS

500g beef mince

1/2 onion, diced

1tsp garlic, minced

5 mushrooms, diced

A bunch of flat-leaf parsley, chopped

4 whole capsicums

1/4 cup sunflower seeds

1tsp cumin

1tsp smoked paprika

Pepper & salt

Balsamic glaze

1 zucchini, grated

A handful of grated cheese, optional


METHOD

  1. Dice onion and mushrooms and fry off in a little olive oil and garlic in a frying pan, then add the mince. Break it up as you cook it and add pepper and salt to season it

  2. Then sprinkle in the spices and sunflower seeds

  3. Dress the mince mix with balsamic glaze and allow to cook

  4. Cut off the tops of the capsicums and cut out the insides, place the capsicums in a small oven dish and once the mince is cooked add the chopped parsley and spoon the mixture into the capsicums

  5. Add the cheese to the tops if you wish and then place the "lids" of the capsicums back on before roasting

  6. Roast at 180 degrees for 25-30 mins depending on how hot your oven gets

  7. Enjoy!
