STICKY PORK MINCE

A very scrumptious Asian dish that will leave you feeling very satisfied. Serves 4.


INGREDIENTS

- 1kg pork mince

- 1/5 brown onion, sliced

- 1tsp ginger

- 1tsp garlic

- 1/4 cup oyster sauce

- 1tbs olive oil

- 3tbs tamari sauce or soy sauce


STICKY PEANUT BUTTER SAUCE

- 3tbs peanut butter, smooth

- 1tbs miso paste

- 1tsp ginger

- 2tsp garlic

- 2tsp chilli flakes

- 2tbs sesame seed oil

- 2tbs honey

- 3-4tbs hot water


THE REST

- 1 pack of rice noodles

- fresh coriander

- fresh chilli, optional

- lightly steamed bok choy


METHOD

  1. Add the olive oil, sliced onion, garlic and ginger to the fry pan and sautee until the onion is translucent

  2. Add the pork mince and brown the mince

  3. Add the oyster and tamari sauce

  4. For the sauce add all the ingredients into a small saucepan and mix well adding the hot water as you go

  5. Boil the jug and place the noodles into a mixing bowl and pour the hot water over the top

  6. Once the mince is cooked through and the sauce is ready to go, strain the noodles

  7. Chop some fresh coriander, chilli and spring onions for the top

  8. Place the noodles and sauce in a seperate mixing bowl and mix well and then plate them

  9. Add the mince to the top and the fresh herbs

  10. Enjoy with your family and loved ones



* Moving away from the numbers game and towards being more conscious humans. Getting back in tune to how our food makes us feel.


* This meal was amazingly satisfying. A little bit of sweet, a little bit of chilli and lovely fresh ingredients. Loved it & it also supports my health goals. A regular meal for me.
