Sticky ginger and seaweed Tofu

This recipe jumped straight to the top of my favourite's list. Seaweed is a great source of iodine which helps with thyroid issue's and other health benefits being a natural mineral from the earth's soil & the ocean. SERVES 2.


INGREDIENTS

400g firm tofu

1/2 cup of GF flour

Olive oil, spray

2 large handful's of spinach or any leafy green, I also like to use tuscan kale

2tsp sesame seeds


STICKY SAUCE

4tbs tamari sauce

2tbs sesame seed oil

1tbs honey, raw (stickier)

2tsp fresh ginger, peeled & grated or store bought is also fine

1 handful of dried seaweed, broken between your palms

1tsp chilli flakes

1tsp garlic, minced


METHOD

  1. Cut the tofu up into cubes, in a large mixing bowl add the gluten free flour

  2. Toss the tofu around until it is evenly coated and the lightly oil a large frying pan

  3. Cook the tofu on medium heat, turning them as you go

  4. Mix the sticky sauce and shake well to combine

  5. Pour over the tofu in the pan and give the pan a little toss to evenly coat the tofu in stickiness

  6. Add spinach and allow it to wilt. Heat on low

  7. Plate up and sprinkle the sesame seeds on at the end

  8. Whola! Sheer happiness in a bowl.
