Simple, high in protein and oh so delicious. A great weeknight dinner. SERVES 4.
INGREDIENTS
- 4 chicken breasts
- 2tbs honey
- 1tsp garlic, minced
- 1tsp dried herbs
- 1tbs balsamic glaze
- Fresh beans to serve with
DUKKAH
- 1/4 cup of flaked almonds, pan roasted
- 1 handful of walnuts, pan roasted
- 1 handful of pine nuts, pan roasted
- 2tsp dried mixed herbs
- A good pink of rock salt
- Fresh parsley, handful
- Fresh sage, handful
METHOD
- Coat the chicken breasts in the marinade and allow them to sit for 30mins
- Pre heat the oven to 180 fan forced
- Place the chicken on a lined baking tray and place in the oven for 30-40mins
- Roast the nuts in a fry pan and add to a food processor with the salt and herbs, whiz until a nice consistent crumble is made
- Top and tail the beans and cook to your liking, add a little butter once they have been cooked and rest until the chicken is ready
- 5-10mins before the chicken is done pull it out of the oven and coat with the dukkah and return back to the oven
- Enjoy with loved ones.
