SLOW COOKED SHORT RIBS

The only way to eat short ribs. SERVES TWO.


INGREDIENTS

2 decent sized short ribs, I brought mine from Coles and they were amazing

2tsp dried thyme

2tsp mixed herbs

Fresh Oregano, chopped

1tsp garlic

2tbs olive oil

1tbs honey

Salt & pepper to season

Sweet potato

butter/nutalex

Fresh parsley


METHOD

  1. Set the slow cooker to high for six hours

  2. Add the short ribs in and Sprinkle on all of the above ingredients minus the last three

  3. Coat all over the short ribs and leave for 5-6hrs

  4. Once the short ribs have finished cooking all you have to do now is peel and chop some sweet potato and add to boiling water

  5. Once it is soft and breaks after you stick a fork into the cubes, drain water, add butter and a little cinnamon or nutmeg if you like and mash away

  6. Sprinkle with fresh flat leaf parsley and place the sweet potato mash on the plate first and then add the ribs

  7. Presto! You have one insanely tasty meal.
