SAUSAGE ROLL SCROLLS

A great way to get the kids to eat more protein with a few sneaky vegetables. SERVES EVERYONE.


INGREDIENTS

Frozen (GF) puff pastry, I used 'Simply Wise' from Coles

Beef mince - how much is dependent on how many you are cooking for

1/2 a chopped brown onion

1/2-1 grated zucchini - place in paper towel and squeeze excess liquid out

Olive oil spray

Black or white poppy seeds to garnish

Cheese optional


METHOD

  1. Thaw the puff pastry and for 13 scrolls I used four sheets of pastry

  2. Preheat the oven to 180 degrees, fan forced

  3. Overlap four sheets of pastry on the bench top and press the ajoining edges together with a fork

  4. In a large bowl mix the mince (I used 1kg for 13), onion and zucchini together

  5. Lay it out evenly over the pastry and with both hands roll the pastry and meat in one long roll

  6. Cut into even sections and place on a lined baking tray and spray with olive oil

  7. Cook for 30-35mins, keep an eye on them
