SALMON & BACON PIE, OH MY!

The ultimate winter warmer. This dish makes me smile from the inside out. SERVES 6.


INGREDIENTS

- 2 skinless salmon fillets

- 1/2 brown onion, diced

- 1-2tsp grainy mustard

- 1/3cup GF flour

- 200-250ml milk, I used almond milk

- 1.5cup of frozen peas, steamed first

- 200g diced bacon

- 1-2tsp garlic, minced

- A splash of olive oil

- 1 egg, whisked

- GF puff pastry sheets x2, or normal store brought pastry is fine


METHOD

  1. Pre heat the oven to 180-190 degrees, fan forced

  2. Have your pie dish ready to go

  3. Fry off the salmon fillets first and then set aside

  4. Fry the diced onion and bacon in a little olive oil with the garlic

  5. Add the flour and stir through on a medium to low heat

  6. Add the milk 1/2cup at a time, now using a whisk to mix well

  7. Add the mustard and peas

  8. Roughly chop the salmon fillets and place in the pan

  9. Place the pie mix in the dish and place the sheets of puff pastry on top

  10. Brush over the egg wash and place in the oven for 40mins

  11. Enjoy with a side of greens and some roast sweet potato or potato.


* Moving away from the numbers and towards a better relationship with our food.

* This recipe made me feel happy and satisfied whilst still supporting my strength goals with the added protein.
