RADICCHIO SALAD

Possibly one of my favourite things to eat. SERVES AS MANY AS YOU WANT IT TO SERVE.


INGREDIENTS

2-3 radicchio lettuce's

1 cup of walnuts

1tbs honey

2tsp cinnamon

1tsp smoked paprika

Pumpkin

Olive oil

Blue cheese


METHOD

  1. Cut pumpkin and place in a mixing bowl with olive oil, 1tsp cinnamon, smoked paprika and then line a baking tray and roast for 30-40mins at 200 degree's.

  2. In a saucepan place walnuts, 1tbs honey and 1tsp cinnamon and stir around until well coated, set aside for them to harden

  3. On a platter place the pumpkin and layer the salad with the rest of the ingredients

  4. Drizzle with balsamic glaze and a little olive oil

  5. Enjoy with any protein.
