QUICK SIDE RICE

Probably one of my favourite side dishes to date. SERVES 2


INGREDIENTS

1 250g brown rice (90sec packet rice)

Handful or two of dried cranberries

1/2 red onion, sliced length ways

Fresh dill

1tsp garlic, minced

1/2tsp cumin

1/2tsp smoked paprika

1/2tsp turmeric

1tsp honey

Olive oil


METHOD

  1. Heat the olive oil, garlic and onion in the bottom of the pan

  2. Add the spices and swirl the pan around to evenly roast of the spices to release a beautiful aroma

  3. Add the rice once the onion is coloured

  4. add the cranberries and dill

  5. Last but not least the drizzle of honey

  6. Enjoy with those you love
