PUMPKIN PESTO

This is probably the best go to when you need just a little something something on your lunch time wrap! SERVES 4


INGREDIENTS

- 200g pumpkin (by all means add more to have more pesto!)

- 100g sweet potato

- Fresh basil

- 1/5 tsp garlic, minced

- Pepper + salt


METHOD

  1. Pre heat the oven to 160 degrees, fan forced

  2. Roast the pumpkin and sweet potato without olive oil as this will contribute to the pesto turning in a liquid

  3. Allow the pumpkin to cool and then add all the ingredient into a blender and whiz!

  4. Very simple and very low calorie high nutrient pesto.

No calorie counting here however it is a low calories recipe! Winning.




Delicious and full of flavour and nutrients. Goes well with any protein including smoked salmon.
