This is probably the best go to when you need just a little something something on your lunch time wrap! SERVES 4
INGREDIENTS
- 200g pumpkin (by all means add more to have more pesto!)
- 100g sweet potato
- Fresh basil
- 1/5 tsp garlic, minced
- Pepper + salt
METHOD
Pre heat the oven to 160 degrees, fan forced
Roast the pumpkin and sweet potato without olive oil as this will contribute to the pesto turning in a liquid
Allow the pumpkin to cool and then add all the ingredient into a blender and whiz!
Very simple and very low calorie high nutrient pesto.
No calorie counting here however it is a low calories recipe! Winning.
Delicious and full of flavour and nutrients. Goes well with any protein including smoked salmon.
