PROTEIN, WHATEVER IS IN THE CUPBOARD, FREEZER, BREAKFAST MUFFINS

SERVES 8

INGREDIENTS

1 cup of cooked, mashed sweet potato

2tbs peanut butter

1-2 dates, diced

1tsp vanilla essence

20g protein powder

2tbs cacao powder

1tsp chia seeds

3tbs oats, blitzed


TOPPING

Coconut yoghurt

Berries

Maple syrup


METHOD

  1. Pre heat the oven at 180 degrees, fan forced

  2. Peel and cook the sweet potato

  3. Combine the rest of the ingredients in a bowl and add the sweet potato, combine with a fork

  4. Place in patty pans and place in the oven for 40mins

  5. Serves with berries, coconut yoghurt and maple syrup

*Double the batch and you can leave in the freezer for up to two months.
