PROTEIN PANCAKE RAMEKINS

My favourite cold weather breakfast. SERVES 1.


INGREDIENTS

1/4 cup of GF flour

1 banana

1 scoop of protein powder

1 egg

Splash of milk (I use almond milk)

1/2 tsp baking powder

Stewed apples, from a can

TOPPINGS

Maple syrup

1tbs Coyo


METHOD

  1. Pre heat the oven at 180 degrees

  2. Place all pancake ingredients, minus the apples in a blender and blend well

  3. Pour some batter into your ramekin and then place in the apples, pour over more batter and place in the oven for 20mins

  4. When cooked through, pull out and add yoghurt and maple syrup

NOTE: Just remember maple syrup is just another name for sugar. Be mindful of how much you have at breakfast to ensure you don't send your blood sugar levels into chaos.
