PROTEIN FUDGE BARS

I just cannot get enough of these bad boys!! Both great for kids and adults.

SERVES 10-12 BARS.


INGREDIENTS

8-10 Medjool dates, pitted

400g tin of chickpeas, rinsed & drained

3tbs natural peanut butter

1/2tsp cinnamon

1 scoop (40g) protein powder, I use Macro Mike

2tsp collagen powder, I use Nutra Organics

1/4 cup warm water

1 cup chocolate drops, I use Noshu 95% sugar free

1tbs coconut oil


METHOD

  1. Place everything minus the chocolate and coconut oil in a food processor and blend until a smooth paste is formed

  2. In a lined baking tray (slice tin) add your mixture and place in the freezer to set

  3. Melt your choc drops and coconut oil over boiling water on the stove top

  4. Allow the chocolate to cool a little

  5. Bring the bars out of the freezer and cut into bar sizes

  6. Over a lined baking tray, drizzle the bars with chocolate

  7. Keep in the fridge and enjoy!
