Pea & Mint Fritters

Something so simple and so versatile you'll want to make them all of the time. SERVES 10.


INGREDIENTS

2 Zucchini's grated, excess juices squeezed

1 cup defrosted peas

A handful of mint leaves, chopped

1 cup of GF Flour

1tsp baking powder

1/2 - 1 cup of (unsweetened) almond milk

Pepper and salt

2 eggs add Za'atar spice & S+P, whisk well


METHOD

  1. Grate zucchini's and squeeze extra liquid out between paper towel. Set aside.

  2. Sit pea's in water, drain and set aside.

  3. Chop mint

  4. Whisk eggs, Za'atar and pepper and salt together

  5. In a large mixing bowl add zucchini, flour, peas, egg mix and mix together. Slowly and carefully add the milk in

  6. Mint goes in last

  7. Lightly spray a non stick pan with olive oil and keep the pan oiled as you cook all the fritters

  8. Enjoy with those you love.
