Nourishing Hormone Salad

Enjoy this amazing salad and watch your energy and mood stabilise afterwards. SERVES 1.


INGREDIENTS

Lettuce, chopped

Roast pumpkin

1tbs honey

Walnuts, chopped

Red onion, diced

Sunflower seeds, I like to fry them off in the pan

Tomato, diced

Fresh flat leaf parsley, chopped

Roza's Pesto, drizzled on top

Protein I used Sardine's but you do you. Sardine's are full of selenium & calcium and selenium is great for anyone with a dysfunctional Thyroid.


METHOD

  1. Cut and roast pumpkin on a lined baking tray in a pre heated oven of 180+ fan forced. Drizzle honey over the pumpkin.

  2. Assemble the rest of the salad and enjoy.
