INGREDIENTS
Lettuce, chopped
Roast pumpkin
1tbs honey
Walnuts, chopped
Red onion, diced
Sunflower seeds, I like to fry them off in the pan
Tomato, diced
Fresh flat leaf parsley, chopped
Roza's Pesto, drizzled on top
Protein I used Sardine's but you do you. Sardine's are full of selenium & calcium and selenium is great for anyone with a dysfunctional Thyroid.
METHOD
Cut and roast pumpkin on a lined baking tray in a pre heated oven of 180+ fan forced. Drizzle honey over the pumpkin.
Assemble the rest of the salad and enjoy.
