NACHO NIGHT

A healthy nacho wrapped up in a GF tortilla. Create this recipe in roughly 30mins.


INGREDIENTS

Chicken thigh fillets

2tbs olive oil

1-2tsp garlic, minced

Lemon juice

Purple cabbage, chopped

1/2 purple onion, sliced

Kale, cut from the stem and chopped finely

Cumin

Smoked paprika

Garlic, dry spice

coriander, spice

Dried cranberries

Avocado

GF tortilla's

TOPPINGS

Sriracha sauce

Kewpie mayonnaise


METHOD

  1. Preheat the BBQ and get it hot, hot, hot

  2. Marinate the chicken thighs in the olive oil, lemon juice, garlic and salt + pepper

  3. Cook chicken and chop the kale, cabbage and onion

  4. In a frying pan add oil and the dry spices

  5. Add to the frying pan the onion first and then the cabbage and kale then finally cranberries

  6. Flip the chicken and just before they are done add the tortilla's to the BBQ

  7. Once everything is cooked, slice the avocado and assemble your tortilla's

  8. Add the sriracha sauce and kewpie to the top and enjoy!
