ITALIAN STYLED SARDINES

A wholesome lunch with a twist.


INGREDIENTS

6 sardines, canned or fresh

GF flour

Pepper & salt

olive oil

Handful of pine nuts, roasted

A bunch of flat-leafy parsley, chopped

1 fresh lemon

Cherry tomatoes

Balsamic glaze

2tbs almond meal


METHOD

  1. Cut the sardines length ways, dip in GF flour with pepper and salt in it

  2. Cook in olive oil on both sides until a crisp outside layer is formed

  3. Place on a plate and squeeze lemon juice over the top

  4. In a small mixing bowl add almond meal, pine nuts, olive oil, chopped parsley

  5. Spoon the parsley mixture on top of the sardines

  6. Quarter the cherry tomatoes and glaze in balsamic glaze and place in the middle of the plate.

  7. A very hormone nourishing lunch right there.
