HAZELNUT, OLIVE OIL CAKE

A very delightful and easy way to treat yo' self or those you love. Pending on how big you slice your cake portions as to how many serves are in this recipe.


INGREDIENTS

150g Hazelnut meal (or almond meal or both)

1tbs cocoa powder

1tsp baking soda

Zest of one lemon

Pinch of salt

1/2 cup olive oil, extra virgin of course yum!

1/2 cup coconut sugar & 1/2 cup sugar

3 eggs

2 tsp vanila extract


METHOD

  1. Grease a spring loaded 20cm/8" cake tin

  2. Preheat the oven at 160 degrees, fan forced

  3. Mix the meal, baking soda, lemon rind and salt in a bowl

  4. Beat olive oil, eggs, and sugar for 2-3mins, add vanilla extract

  5. Fold in dry ingredients with a spatula

  6. Pour into your greased tin and bake for 45mins, keep an eye on it

  7. Transfer carefully to a cooling rack and when cooled sieve icing sugar over the top

  8. Enjoy with those you love the most and create cherished memories
