If you have cranky hormones or just very unhappy bloody sugar levels start eating this for Breakfast.
INGREDIENTS
3-4 eggs, fried
Spinach leaves, i use the english spinach or silverbeet, cabbage chopped finely also works
Pesto, I use Roza's Pesto
Pepitas, pan fried first
Fresh coriander & flat leaf parsley
Chilli flakes + Dukkah
Olive oil for the pan
METHOD
Spray your pan lightly with olive oil and add the chopped spinach leaves
Add a tablespoon of pesto on top
Crack the three to four eggs and a sprinkle of Dukkah and place the lid on your fry pan
When the eggs are cooked to your liking, plate them up and add the fresh herbs and chilli
