Grandma's lemon & coconut slice

This is a little trip down nostalgia lane for me. A healthy twist on Grandma's classic. SERVES 12.


INGREDIENTS

BASE

- 6 crushed weetbix

- 1/4 cup almond meal

- 1tbs vanilla protein powder, optional

- 1/4 cup desiccated coconut

- 1/4 cup maple syrup, I use the zero calorie option from Woolworths

- 1/3 cup almond milk


TOP

- 1 can coconut cream

- 1/4 cup maple syrup

- Juice of 1 lemon

- 1/4 cup desiccated coconut


METHOD

  1. Line a baking tray with baking paper

  2. In a large mixing bowl add the base ingredients using your hands to combine well

  3. Press into the tin and spread it evenly

  4. With a whisk combine all the "top" ingredients together

  5. Pour over the base and allow it to set in the freezer

  6. Enjoy with those you love.


* A little trip down delightful memory lane. Sweet but not too much. Remember to portion control.
