GF ROCKY ROAD BISCUITS

These are next level and I truly believe you can not restrict yourself from foods you enjoy. SERVES 10-12.


INGREDIENTS

- 160g GF flour

- 50g of turkish delight, chopped

- 20g sugar free marshmellows

- 40g dark chocolate, chopped

- 1 egg

- 120g nutalex or butter

- 2tbs coconut sugar


METHOD

  1. Pre heat the oven to 160 degrees, fan forced

  2. Chop up the chocolate, turkish delight and marshmellows

  3. Whisk the nutalex and sugar together, whip it into a creamy texture

  4. Add the flour and egg and keep whipping

  5. Add the "good stuff" and fold it in with a spatular

  6. With a tablespoon, spoon the mixture onto two lined baking trays and cook for about 15-20mins

  7. A fun one and very easy for the kids to help with!!


*Moving away from Calorie counting and building a better relationship with ourselves and food. Forgetting the numbers and being more in tuned with how our food choices make us feel.






* At first these biscuits were delicious and very addictive. However my body isn't used to that amount of sugar even though it is coconut sugar but there is also sugar in the chocolate, so it was an overload for me. I had a massive headache in about 20mins and it lasted until the next day as well. So consume with caution and portion control these bad boys!! This is a rare occassion recipe.
