Oui Oui one of my favourite vegetarian or non vegetarian dishes. Serves 4.
INGREDIENTS
2 fresh kaffir lime leaves
handful of peppercorns
2 cloves of garlic, crushed
1L vegetable stock
1.2L water
1cup of dry white wine
400g mixed mushrooms, optional
1tbs olive oil
2 cloves garlic
4 spring onions, finely sliced
1/2 cup dry white wine
2 cups vegetable stock
1 cup french style lentils
pepper and salt to taste
fresh parsley and thyme
Chicken breasts for non vegetarian option
Polenta, optional
METHOD
Probably the best recipe yet, put all of the ingredients into the slow cooker and leave for 4hrs.

* Less calorie counting more awareness around how our food makes us feel.
* This was a surprise dish. I had not high hopes for it to rock my world BUT it did and I felt very nourished afterwards, it was nice to move away from meat. Also a very nostalgic dish for me as this is my Mum's recipe, someone who I greatly admire.
