FRENCH LENTILS

Oui Oui one of my favourite vegetarian or non vegetarian dishes. Serves 4.


INGREDIENTS

  • 2 fresh kaffir lime leaves

  • handful of peppercorns

  • 2 cloves of garlic, crushed

  • 1L vegetable stock

  • 1.2L water

  • 1cup of dry white wine

  • 400g mixed mushrooms, optional

  • 1tbs olive oil

  • 2 cloves garlic

  • 4 spring onions, finely sliced

  • 1/2 cup dry white wine

  • 2 cups vegetable stock

  • 1 cup french style lentils

  • pepper and salt to taste

  • fresh parsley and thyme

  • Chicken breasts for non vegetarian option

  • Polenta, optional

METHOD

  1. Probably the best recipe yet, put all of the ingredients into the slow cooker and leave for 4hrs.

  2. Enjoy & nourish your body as a family or with friends on a cool winters night.


* Less calorie counting more awareness around how our food makes us feel.


* This was a surprise dish. I had not high hopes for it to rock my world BUT it did and I felt very nourished afterwards, it was nice to move away from meat. Also a very nostalgic dish for me as this is my Mum's recipe, someone who I greatly admire.
