This is my niece's favourite dish of mine, I hope it becomes one of yours. SERVES 5-6.
INGREDIENTS
- 1kg beef mince
- 1/2 brown onion, diced
- 1tsp garlic, minced
- Dried mixed herbs
- 1 carrot, grated
- 1 zucchini, grated and squeezed of excess liquid
- 500g sliced mushrooms, optional
- 2tbs tomato paste
- 2 cans of crushed tomatoes
- 2tbs balsamic glaze
- 1 box of chickpea pasta or two depending how many you are feeding
METHOD
Diced the onion and fry it off in a large pan with olive oil
Add the minced garlic then add the mince once you have the onion & garlic quite fragrant
Once the mince is browned add the grated vegetables and then the tin tomatoes and paste
Sprinkle in the dried herbs and balsamic glaze
Boil a saucepan of water and cook the pasta for roughly 8mins, once again depending how much you are cooking
