Not getting enough plant based fibre in your diet? Don't worry, no one is. Try this next time you reach for bread. Goodluck being hungry afterwards. SERVES 1.
INGREDIENTS
1/2 eggplant, cut length ways
1/2 tsp chilli flakes
1/2 tsp turmeric
1/2tsp mixed herbs
1/2tsp smoked paprika
Pinch pf salt + pepper
Olive oil
TOPPINGS
1 can chilli tuna
Goats cheese
Roza's Gourmet Pesto
METHOD:
Cut the eggplant in half, lengthways and then cut squares into the inside flesh of the vegetable.
Coat it with a drizzle of olive oil and then add the herbs and spices, massage it into the cuts.
Heat a fry pan with olive oil, place the eggplant in and lid on. Cook for 8-10mins.
Once cooked, plate up and add the toppings to the eggplant.
Presto! One high fibre and protein breakfast, lunch or dinner. The choice is yours. Enjoy!
