EGGPLANT BOATS

Not getting enough plant based fibre in your diet? Don't worry, no one is. Try this next time you reach for bread. Goodluck being hungry afterwards. SERVES 1.


INGREDIENTS

1/2 eggplant, cut length ways

1/2 tsp chilli flakes

1/2 tsp turmeric

1/2tsp mixed herbs

1/2tsp smoked paprika

Pinch pf salt + pepper

Olive oil

TOPPINGS

1 can chilli tuna

Goats cheese

Roza's Gourmet Pesto


METHOD:

  1. Cut the eggplant in half, lengthways and then cut squares into the inside flesh of the vegetable.

  2. Coat it with a drizzle of olive oil and then add the herbs and spices, massage it into the cuts.

  3. Heat a fry pan with olive oil, place the eggplant in and lid on. Cook for 8-10mins.

  4. Once cooked, plate up and add the toppings to the eggplant.

  5. Presto! One high fibre and protein breakfast, lunch or dinner. The choice is yours. Enjoy!
