Edamame Smash

Not smashed avocado but a great protein edamame smash. SERVES 2.


INGREDIENTS

400g edamame beans, frozen from Woolworths

2tbs coconut yoghurt

handful of coriander leaves & stalks

juice of 1/2 lemon & grated zest

3tbs olive oil

pinch of salt

GF Sourdough

chilli flakes to serve

lemon wedge

bean sprouts, optional


METHOD

1. Defrost the beans in a strainer

2. Place all the ingredients into a blender and form a smooth paste

3. Toast the GF sourdough

4. Place the smash on top of the toast and sprinkle a little chilli flakes and bean sprouts on top.

5. A great one for the weekend or a weekday delight to change it up.
