These have been one of my favourite dishes that Ben and I have made together. It hit the spot!
INGREDIENTS
2-4 chicken breasts, pending how many you are cooking for
Gluten free cornflakes
Cayenne pepper & garlic powder
1-2 eggs for an egg wash
Gluten free tortillas
lettuce
Sriracha mayo
METHOD
This recipe works best in an air fryer however oven is also doable. If you are using the oven pre heat it to 200 degrees and turn it down to 180 when you put the chicken in
Cut the chicken into "tender" sizes, don't have them too thick
Make the egg wash and crush up the cornflakes to smaller portions and add the two spices. Pending on how hot you like it as to how much cayenne pepper you put in
Dip the. chicken in the egg wash and then in the cornflake mix and lay on a lined tray or in the air fryer basket
Once you are done place in the oven for 20mins or in the air fryer on 200 for 12mins
Place lettuce in the wrap and then the chicken and some sriracha mayo on top! Presto!
