Time poor? This is your go-to dish. SERVES 4.
INGREDIENTS
6-8 Chicken thighs, pending how many mouths you are feeding
2tbs olive oil
2tsp garlic, minced
Pepper & salt
2 bunches broccolini
Truss tomatoes, optional
CHIMICHURRI
1 cup of flat leaf parsley chopped
3tsp garlic
1tsp dried oregano
125ml olive oil
2tbs apple cider vinegar
1tsp dried chill, optional
Pepper & salt
METHOD
BBQ or oven grill your chicken first coat the chicken in the olive oil and garlic and allow to sit for 30mins before cooking
Make the chimichurri and mix well, set aside
Cut the broccolini and add the the BBQ or oven just before the end of cooking the chicken
You can cook the tomatoes if you wish or keep them raw.
So easy and so enjoyable. Plate all in the same dish and share with loved ones.
