Blood Orange & Rosemary Charred Chicken

Keep things exciting in the kitchen so your taste buds don't want to cheat all the dam time ;)

SERVES 4.


INGREDIENTS

- 4 Chicken merylands

- 5 sprigs of fresh rosemary

- 2tsp garlic, crushed

- 3tbs olive oil

- 1 blood orange

- 1/2 of a lemon, juice & rind

- Fresh rocket

- Green olives, pitted

- Sweet potato

- Pepper & salt, of course!


METHOD

  1. Marinade the chicken merylands in a large bowl adding in the olive oil, garlic, lemon juice and rind and toss well

  2. Pre heat the oven to 180 degrees

  3. Cut and lightly oil the sweet potato and add to the oven for 40mins

  4. Heat a large saucepan with oil and add the chicken in, skin down first

  5. Brown the chicken pieces well and then transfer to a large oven dish

  6. Adding in the sliced orange and rosemary to the saucepan, lightly cooking and then add them on top of the chicken

  7. Place in the oven for at least 40mins

  8. On a platter add the fresh rocket, sweet potato and olives, place the chicken and orange pieces on top

  9. Presto! Enjoy with your loved ones
