BENNY'S EASY SALMON

Such a simple and fun way to eat Salmon and get your Omega 3's in. SERVES AS MANY AS YOU WANT.


INGREDIENTS

Salmon fillets, 1 fillet pp

4-5 silverbeet leaves

1/4-1/2 red onion

1tsp garlic, minced

cherry tomatoes, halved

Balsamic glaze

Pesto, I use Roza's Pesto available in most Woolworths


METHOD

  1. Pre heat the oven to 180 degrees, fan forced

  2. Line a baking tray and hold the fillet on either side as if you are squeezing it and make a cut length ways down the fillet

  3. Saute the onions, tomatoes and spinach in a little olive oil, garlic and at the end add the balsamic glaze to sweeten everything

  4. Stuff the salmon with the vegetables and add pesto to the top

  5. Bake for 25-30mins

  6. I added sweet potato chips to the side.

  7. Enjoy!
