Such a simple and fun way to eat Salmon and get your Omega 3's in. SERVES AS MANY AS YOU WANT.
INGREDIENTS
Salmon fillets, 1 fillet pp
4-5 silverbeet leaves
1/4-1/2 red onion
1tsp garlic, minced
cherry tomatoes, halved
Balsamic glaze
Pesto, I use Roza's Pesto available in most Woolworths
METHOD
Pre heat the oven to 180 degrees, fan forced
Line a baking tray and hold the fillet on either side as if you are squeezing it and make a cut length ways down the fillet
Saute the onions, tomatoes and spinach in a little olive oil, garlic and at the end add the balsamic glaze to sweeten everything
Stuff the salmon with the vegetables and add pesto to the top
Bake for 25-30mins
I added sweet potato chips to the side.
