A NOURISHING FRITTATA

Sick of eating meat to increase your protein intake? Need to add more vegetables? Want a meal that you cook once but can eat multiple times throughout the week? SERVES 6-8


INGREDIENTS

6 eggs, whisked

1 sml chilli, chopped

Garlic

Kale x3 leaves, stripped from stalk and chopped finely

1tsp turmeric

Dried mixed herbs

Pepper

Goats cheese

Sweet potato, sliced and boiled

1/2 red onion, sliced


METHOD

  1. Pre heat the oven to 200 degrees, fan forced

  2. fIRST start with slicing the sweet potato and place it in boiling water to par cook it

  3. In a mixing bowl whisk the eggs, turmeric and dried herbs. Add the chilli last and set aside

  4. Fry off a little oil in a pan and add your garlic, onions and then chopped kale

  5. Once the sweet potato is partly cooked, lay them in a tart tin

  6. Pour over the egg mix

  7. Sprinkle over the kale and onion mix

  8. Add a little goats cheese and turn the oven down to 180 and cook for 20-25mins

  9. Enjoy!
